When hiring a girl, use the arrows to change her outfit (also known as "skin") to another one you own.

In addition to that, outfits can be changed after a girl is hired by first selecting the girl, then clicking the refresh icon that will appear in the lower left corner. You may have to click more than once to get the outfit you want if you own several outfits for the same girl.
